Why are games a good place to learn building software with AI?

Because games are unforgiving. A game has to load instantly, respond to a touch within a frame and feel right on a small screen, or nobody plays it twice. In February I shipped three in three weeks: a rebuild of Block 89 whose timers had been too tight, a brand new arcade racer called Outburn 87 submitted to both stores just after midnight, and a new engine for Snake '97, a game with millions of players, extended with respect for existing installs and scores. The agents do very well when you give them code; old, good code is a form of value. The solutions you are forced to find in a game then carry over to office software, where nobody demanded them but everybody enjoys them.
